Hong Kong-The Eleventh Annual Fred Tibbitts & Associates “A
Fall Evening in Hong Kong with Very Special Friends” proved to be another
memorable event for the eighty guests, who included hotel executives, senior
vice presidents, managing directors, general managers, hotel managers, directors
of food & beverage and executive chefs, industry VIP’s, the press and valued
sponsors.
The reception was hosted by Pernod Ricard Hong Kong, FIJI
Water, Stoelzle glassware, Cranswick Wines Australia and Luzerne Chinaware.
Phillips Foods Asia provided their finest crab meat for many of Executive
Chef Hongman Cheung’s marvelous canapés and hors d’ouvres.
All guests were formally announced with style by Gubi Cheng, Events
Coordinator and chimed in by Heidi Choi, Waitress, both associates of Hyatt
Regency Hong Kong, Sha Tin,
The four-course gala dinner brought Fred Tibbitts to the
podium, who welcomed the guests and asked that they consider “Service as the
Highest Calling”. Tibbitts explained
that the primary purposes of the FTA dinners are to recognize hospitality
excellence, provide scholarships in the names of those whom are honored and to
make charitable contributions to benefit those less fortunate.
Tibbitts promptly called for the evening’s eleven “Loyalty Toasts” with
Champagne G H Mumm by some of the dinner personalities, including
; and Jake Jacob, Regional Director, Asia
Pacific & UAE, Gerard Bertrand Wines.
After the guests enjoyed their elegant First Course of
Phillips Crabmeat Mousse, Salsify, Honey Bean Champagne Beurre Blanc paired with
four delightful white wines from the South of France, New Zealand and Australia,
Tibbitts announced a donation of $500.00 USD from a portion of the dinner
proceeds to the China Tibetan Children Health & Education Fund, which was
gratefully accepted by Alice Chan, Director on behalf on Madame Annie S.C. Wu,
Founder.
Tibbitts returned to the podium after the Main Course of
Roasted US Prime Beef Sirloin, Vichy Carrot, Porcini Mushrooms, Broccolini,
Roasted Kipfler Potato, Demi Glace paired with four great red wines from the
South of France, Australia and California to announce the Recipients of the 2011
FTA Hospitality Awards for Excellence – North America, which will be presented
at the 2011 FTA Fall Awards Dinner at the Vanderbilt Suites in The MetLife
Building at New York City on 15 November; and to present the 2011 FTA
Hospitality Award for Excellence as an Operator – Asia Pacific.
The Recipient of the 2011 FTA Hospitality Award for
Excellence as an Operator-North America was announced as being Brian Abel, Vice
President, Food & Beverage, North America, Starwood Hotels & Resorts.
The recognition was accepted on behalf of Abel by Charles Woo, Area
Managing Director, Starwood Hotels & Resorts.
The Recipient of the 2011 FTA Hospitality Award for
Lifetime Excellence was announced as being Eric Long, General Manager, The
Waldorf=Astoria. The recognition was
accepted by on behalf of Long by Robert Marek, Director of Operations, Conrad
Hong Kong.

The Recipient of the 2011 FTA Hospitality Award for
Excellence as an IT Innovator was announced as being MICROS Systems, Inc.
Kevin King, Managing Director – China, Micros-Fidelio China accepted the
recognition.
The Recipient of the 2011 FTA Hospitality Award for
Excellence as a Humanitarian was announced as being Robert Thurman, President,
Tibet House US & Jey Tsong Khapa Professor of Indo-Tibetan Buddhist Studies,
Columbia University. In Thurman’s
absence Tibbitts detailed his many humanitarian contributions.
The 2011 FTA Hospitality Award for Excellence as an
Operator – Asia Pacific was then presented by Tibbitts to Andreas Stalder,
Senior Vice President, Product & Brand Development, Hyatt International – Asia
Pacific. Stalder accepted the Award
in the name of all his associates at Hyatt International – Asia Pacific, who
endeavor everyday to define excellence for their guests and partners.
Following Stalder’s words of Award acceptance, Professor
Kam-hon Lee, Director, School of Hotel & Tourism Management, The Chinese
University of Hong Kong presented Stalder with scholarships in his name totaling
$5,000.00 USD to benefit two worthy students at the University.
Accordingly, Stalder and Professor Lee then presented the scholarships of
$2,500.00 USD each to Mickey Chun Yin and Vivian La Wai, outstanding students at
the School of Hotel & Tourism Management, The Chinese University of Hong Kong.
Chun Yin and La Wai then each took the podium to express their deep
appreciation for the financial aid and recognition.
The Cheese Course followed, Brie de Meaux, Taleggio and
Aged Cheddar with Baguette, accompanied by three premium wines from New Zealand,
the South of France and California.
Following the Dessert Course of Orange Chocolate Crunch
Cake with Jasmine Tea Ice Cream, Tibbitts asked Robert Hamer to return to the
podium to “Summon the Brigade”.
Hamer’s summons was answered by a resplendent parade of the 16 kitchen seniors
who prepared the dinner, led by Executive Chef Hongman Cheung as well as the 15
service staff led by Ricky Yeung, Director of Food & Beverage, followed by Simon
Che, Manager – Banquet Service and Esmond Lee, Director of Events.
Hamer and his team of seniors then posed on stage for several group
pictures to commemorate the occasion.
