Pune, India.-The Second Annual Fred Tibbitts & Associates “A Summer Evening
in Mumbai-Pune with Very Special Friends” proved to be another memorable event
for the seventy guests, who included ceo’s, presidents, regional vice
presidents, general managers, hotel managers, directors of food & beverage and
executive chefs, industry VIP’s, the press and valued sponsors.
The reception was hosted by Pernod Ricard India with their ABSOLUT Bar and
Phillips Foods Asia, which provided their finest crab meat for many of Executive
Chef Santosh Jori’s marvelous canapés and hors d’ouvres. All guests were
formally announced with style by Ajinkya Salunkhe, Duty Manager, Front Office,
The Westin Pune Koregaon Park; and gonged with distinction by Karma Lachungpa,
Hostess, Kangan, the chic Indian restaurant serving North West frontier cuisine
at The Westin Pune Koregaon Park.
The four-course gala dinner brought Fred Tibbitts to the podium, who welcomed
the guests and asked that they consider “Service as the Highest Calling”.
Tibbitts explained that the primary purposes of the FTA dinners are to recognize
hospitality excellence, provide scholarships in the names of those whom are
honored and to make charitable contributions to benefit those less fortunate.
Tibbitts then asked The Venerable Tenzin Jangchub, a monk from the Pema Ts’al
Monastic School at Mundgod, India to say a Tibetan Grace, which he chanted in
Tibetan, Tibbitts promptly called for the evening’s eleven “Loyalty
Toasts” with Il Vino dei Poeti Gold Prosecco by Distilleria Bottega. The
toasts were proposed by some of the dinner seniors, including Nasir Shaikh,
Director of Food & Beverage, The Westin Pune Koregaon Park; Paras Anand, Sales
Head North India, Mohan Brothers (Importer of the Il Vino dei Poeti Gold
Prosecco); Dilip Puri, Managing Director-India & Regional Vice President-South
Asia, Starwood Hotels & Resorts; Ajit Luthra, Corporate General Manager-(Finance
& Audit), Classic Citi Investments Pvt. Ltd.; Jaswinder Narang, General Manager,
Le Meridien Pune; Pankaj Mathur, General Manager, Four Points by Sheraton Pune;
Gadi Hassin, General Manager, Hyatt Regency Pune; Nikhil Kapur, General Manager,
Ista Pune; Sudhir Jena, General Manager, Oakwood Premier Pune; Stefan Piringer,
President, Micros-Fidelio Asia Pacific; Lionel Kapetanakos, Area Vice President
and Corporate Accounts, Ecolab.
After the guests enjoyed their elegant First Course of Phillips Crab Rillette
with grape, pine nuts and sherry vinaigrette paired with four delightful white
wines from South Africa, India and the South of France, Tibbitts announced a
donation of $500.00 USD from a portion of the dinner proceeds to the Pema Ts’al
School, Mundgod, India and Pema Ts’al Sakya Monastic Institute, Pokhara, Nepal,
which was gratefully accepted by The Venerable Tenzin Jangchub, Pema Ts’al
School, Mundgod, India. Jangchub then presented Tibbitts with tokens of
the school’s appreciation: A beautiful, gold kata; a neck mala and a
hand-painted Thangka. Tibbitts was most grateful.
Tibbitts returned to the podium after the Main Course Grilled Australian Lamb
Chops, green lentil ragout, fondant potatoes and three great red wines from
India and South Africa to announce the Recipients of the 2011 FTA Hospitality
Awards for Excellence, which will be presented at the 2011 FTA Fall Awards
Dinners at the Hyatt Regency Hong Kong, Sha Tin on 11 October and the Vanderbilt
Suites in The MetLife Building at New York City on 15 November.
The Recipient of the 2011 FTA Hospitality Award for Excellence as an
Operator-North America was announced as being Brian Abel, Vice President, Food &
Beverage, North America, Starwood Hotels & Resorts. The recognition was
accepted on behalf of Abel by Dilip Puri, Managing Director-India & Regional
Vice President-South Asia, President, Starwood Hotels & Resorts.
The Recipient of the 2011 FTA Hospitality Award for Excellence as an
Operator-Asia Pacific was announced as being Andreas Stalder, Senior Vice
President, Product & Brand Development, Hyatt International-Asia Pacific.
The recognition was accepted on behalf of Stalder by Gadi Hassin, General
Manager, Hyatt Regency Pune.
The Recipient of the 2011 FTA Hospitality Award for Excellence as a Humanitarian
was announced as being Robert Thurman, President, Tibet House US & Jey Tsong
Khapa Professor of Indo-Tibetan Buddhist Studies, Columbia University. The
recognition was accepted by The Venerable Tenzin Jangchub, monk, Pema Ts’al
School, Mundgod, India.
The Recipient of the 2011 FTA Hospitality Award for Lifetime Excellence was
announced as being Eric Long, General Manager, The Waldorf=Astoria.
The Recipient of the 2011 FTA Hospitality Award for Excellence as an IT
Innovator was announced as being MICROS Systems, Inc. Stefan Piringer,
President, Micros-Fidelio Asia Pacific accepted the recognition.
The Cheese Course followed with Goat Cheese on horseradish, balsamic onion
marmalade and brioche accompanied by two premium wines from the South of France.
As always, the dinner wines were paired and ordered with excellence by Harriet
Lembeck, CWE at New York City.
Following the Dessert Course of Mango Charlotte with glazed cherries and Sieur
d’Arques Premier ‘Bulle’ Brut, Tibbitts asked Nasir Shaikh to return to the
podium to “Summon the Brigade”. Shaikh’s summons was answered by a
resplendent parade of the kitchen seniors who prepared the dinner, led by
Executive Chef Santosh Jori as well as the service staff led by Food & Beverage
Manager, Chandan Thakur and the rest of their service team. Shaikh, with
his combined team of 45 associates and Dilip Puri, Managing Director-India &
Regional Vice President-South Asia, Starwood Hotels & Resorts, Jaswinder Narang,
General Manager, Le Meridien Pune and Pankaj Mathur, General Manager, Four
Points by Sheraton Pune then posed on stage for several group pictures to
commemorate the occasion.
