Shanghai, P.R.C.-The Eighth Annual Fred Tibbitts & Associates “A Fall Evening in Shanghai with Very Special Friends” proved to be another memorable event for the one hundred-twenty guests, who included hotel executives, senior vice presidents, regional vice presidents, managing directors, general managers, hotel managers, directors of food & beverage and executive chefs, industry VIP’s, the press and valued sponsors.

 

The reception was hosted by Pernod Ricard China, FIJI Water, Ronnefeldt Tea, Stoelzle glassware, Liquid Luxury and Luzerne Chinaware.  Phillips Foods Asia provided their finest crab meat for many of Executive Chef Ivan Susanj’s marvelous canapés and hors d’ouvres, while the SHANGHAI Juerui Industry Co. sponsored a stand with a Master Carver and a delicious Osborne 5J Iberian ham.  All guests were formally announced with style by Ruby Komkommer, Management Trainee; and gonged with distinction by Joyce Cai, Management Trainee.

 

The four-course gala dinner brought Fred Tibbitts to the podium, who welcomed the guests and asked that they consider “Service as the Highest Calling”.  Tibbitts explained that the primary purposes of the FTA dinners are to recognize hospitality excellence, provide scholarships in the names of those whom are honored and to make charitable contributions to benefit those less fortunate.  Tibbitts promptly called for the evening’s eleven “Loyalty Toasts” with Champagne Moet & Chandon Imperial by some of the dinner personalities, including  James Koratzopoulos, General Manager, InterContinental Shanghai Pudong; Oscar Jimenez Nagore, Assistant Sales Manager Shanghai, Moet Hennessy Diageo China; Robert Murray, Senior Vice President-Greater China, Accor; Harris Chan, Vice President, Operations Support, Greater China, Starwood Hotels & Resorts; Jean-Luc Fourrier, Vice President Restaurant Development, Luxury Brands & Full Service, Asia Pacific, Hilton Worldwide; Arne Heuwekemeijer, Director, Operations & Pre-Opening Services, Carlson Hotels, Asia Pacific; Ilja Poepper, Vice President of Operations – Greater China, Howard Johnson Shanghai Management Co.; Hartmut Schaller, General Manager, JW Marriott & Courtyard by Marriott Hangzhou; Richard Xu, Editor-in-Chief, LifeStyle; Nels Frye, Editor-in-Chief, LifeStyle; and Jake Jacob, Regional Director, Asia Pacific & UAE, Gerard Bertrand Wines.

 

After the guests enjoyed their elegant First Course of Phillips Crab Meat & Freshwater Yabbie Layer, Truffled Tomato Tartare, Organic Cucumber Dill Jelly paired with five delightful white wines from China, the South of France, South Africa and New Zealand, Tibbitts announced a donation of $550.00 USD from a portion of the dinner proceeds to UNICEF China, which was gratefully accepted by Richard Xu, Editor-in-Chief of New Western Cuisine Magazine on behalf on Madame Annie S.C. Wu.. 

 

Tibbitts returned to the podium after the Main Course of Australian Wagyu Prefecture Beef Tenderloin, Foie Gras Crepinette, Symphony of Enoki, Shitake, Button, Oyster Mushrooms, Potato Horseradish Beignet and Cabernet Jus paired with four great red wines from China, Italy and Chile to announce the Recipients of the 2011 FTA Hospitality Awards for Excellence, which will be presented at the 2011 FTA Fall Awards Dinners at the Hyatt Regency Hong Kong, Sha Tin on 11 October and the Vanderbilt Suites in The MetLife Building at New York City on 15 November.

 

The Recipient of the 2011 FTA Hospitality Award for Excellence as an Operator-North America was announced as being Brian Abel, Vice President, Food & Beverage, North America, Starwood Hotels & Resorts.  The recognition was accepted on behalf of Abel by Harris Chan, Vice President – Operations Support Greater China, Starwood Hotels & Resorts.

 

The Recipient of the 2011 FTA Hospitality Award for Excellence as an Operator-Asia Pacific was announced as being Andreas Stalder, Senior Vice President, Product & Brand Development, Hyatt International-Asia Pacific.  The recognition was accepted on behalf of Stalder by Wilson Lee, General Manager, Andaz Shanghai.

 

The Recipient of the 2011 FTA Hospitality Award for Lifetime Excellence was announced as being Eric Long, General Manager, The Waldorf=Astoria.  The recognition was accepted by on behalf of Long by Dirk De Cuyper, General Manager, Waldorf Astoria Shanghai on the Bund.

The Recipient of the 2011 FTA Hospitality Award for Excellence as an IT Innovator was announced as being MICROS Systems, Inc.  Kevin King, Managing Director – China, Micros-Fidelio China accepted the recognition.

 

The Recipient of the 2011 FTA Hospitality Award for Excellence as a Humanitarian was announced as being Robert Thurman, President, Tibet House US & Jey Tsong Khapa Professor of Indo-Tibetan Buddhist Studies, Columbia University.  In Thurman’s absence Tibbitts detailed his many humanitarian contributions.

 

The Cheese Course followed, Phillip Olivier “Coulommiers de Tradition”, Comte, Fourme d’ Ambert with Thyme-infused Red Onion Jam, Quince Paste, Caramelized Onions, accompanied by four premium wines from New Zealand, the South of France and South Africa.

 

Following the Dessert Course of Fine Swiss Felchin Chocolate Mousse with Ronnefeldt Mint Tea Infused Mango Compote on Swiss Layer, Tibbitts asked James Koratzopoulos to return to the podium to “Summon the Brigade”.  Koratzopoulos’s summons was answered by a resplendent parade of the 10 kitchen seniors who prepared the dinner, led by Executive Chef Ivan Susanj as well as the 46 service staff led by Frank Song, Chinese Operations Manager.  Koratzopoulos and his team of seniors, including Executive Assistant Manager, Emmanuel Stavrakakis then posed on stage for several group pictures to commemorate the occasion.
